Trestles Coastal Cuisine: A Fresh Taste of the Coast in Castle Pines

Trestles Coastal Cuisine offers Castle Pines a delightful escape to the coast with its fresh, sustainably sourced seafood and vibrant flavors. Founded by husband-and-wife duo Jose and Mimi Espinoza, the restaurant is inspired by the iconic Trestles surf break in Southern California, capturing the laid-back coastal vibe.

The menu features standout dishes like oysters on the half shell, blackened mahi-mahi tacos, lobster tail, and a rich cioppino stew, all thoughtfully prepared by Chef Jose Espinoza alongside head chef Verity Warriner. Diners rave about the quality and creativity, making Trestles a must-visit spot for seafood lovers in the area.

Located at 880 W Happy Canyon Rd, Trestles is open daily with extended hours on weekends, providing a welcoming atmosphere perfect for everything from casual lunches to special dinners. Rhode Island Hotel & 20-Mile House: A Historic Parker Landmark

Gold discovered in Colorado in 1858 sparked a rush that shaped the region’s early settlements. Just south of Parker United Methodist Church, Alfred Butters built a one-room refuge called Pine Grove around 1863. Serving travelers with mail, provisions, and messages, Butters eventually traded it for a yoke of oxen.

By 1864, George and Susan Long had acquired the building, moved it to its current Mainstreet location, and expanded it with 10 rooms, a second-story ballroom, and stables. Named the 20-Mile House for its distance from Denver City, it became a vital stage stop offering meals, lodging, and supplies.

Ownership passed from the Longs to Nelson and Susan Doud in 1869, then to James Sample Parker by 1870, an ex-bull-whacker and station manager influential in the area’s growth.

Today, the historic Rhode Island Hotel building houses Fika Coffee House, a cozy nod to Parker’s rich past where visitors can enjoy a cup amid living history. Visit Parkercolorado.net for more history!
