The weather is warming up just in time for a jam-packed weekend across DougCo. In this issue, we highlight a popular local favorite—Wolf Peach Public House. Think Highlands Ranch has no history? Foodie Friday

Local Flavor: Wolf Peach Public House in Parker

This restaurant has been recommended to us constantly, especially for a Sunday Brunch. Since opening in late 2023, Wolf Peach Public House has carved out a reputation as one of Parker’s top dining destinations. Named after the old European term for the tomato—once believed to be poisonous—Wolf Peach blends culinary history with bold, modern flavors.

At the helm is Executive Chef Jason Okurowski, crafting a seasonal menu of refined American dishes. Highlights include ricotta gnocchi, braised short ribs, and creamy burrata, with a popular weekend brunch that features crowd-pleasers like the Parker omelette and mimosas.

The ambiance strikes a perfect balance between upscale and comfortable, with a sleek interior and inviting patio. Thoughtful service and attention to detail round out a memorable dining experience that’s earned high praise from locals and a 4.6-star OpenTable rating.

DougCo Through the Years

Pine Tree Ranch: The Legacy of the Underwood-Grigs Homestead

Located in the Highlands Ranch Backcountry Wilderness, Pine Tree Ranch spans 480 acres of historic Douglas County land. Originally settled in 1871 by William Underwood and his wife Lorinda Palmer Underwood, the ranch has deep roots in the region’s pioneer days.

After their divorce, Lorinda married Lafayette “Lafe” Grigs, who expanded the property and established the thriving Pine Tree Ranch. Together, they ran a successful cattle and dairy operation, raising their children Lillie and Edgar on the ranch. Edgar later became a respected educator after serving in World War I.

The ranch featured a five-room home, dairy barn, silo, and corrals. Today, remnants of the property remain, including the silo foundation, but the land is not open to the public. After nearly five decades, the family sold the ranch in 1924, closing a significant chapter in Douglas County’s agricultural history.
